Incorporated in 1874 with capital of $11,000. William Hurlbut was president, G.A. Forbes vice president, E.R. White secretary and Fred C. Fiske treasurer. Fiske, Thomas N. Jarvis, John H. Allen, J.D. Miller, and E.R. White were directors. By 1883, Fred C. Fiske was president, and Theodore Coles was secretary, treasurer, and general manager. The firm constructed a new building, and in 1875 began the manufacture of pocket knives. Silas Moore, a cutler, was manager of the plant.
The William M. Cornwall firm of New York City was agent for the Canastota Knife Company. They employed 80 workers in 1875, and went out of business in 1895 due to unfavorable tariffs. The marking “C.K. Co. Canastota N.Y.” was used on many of their knives.
