John J. Cushner, Melvin Schoonmaker, Wilson Quick, and George F. Brackley incorporated the Honk Falls Knife Company on January 21, 1921. They reopened the old Napanoch Knife Company plant in Napanoch, New York under the new name.
All but Brackley were former employees of the Napanoch Knife Company when it was sold to the Winchester Arms Company in 1919. They were among the Napanoch employees who went to New Haven, Connecticut to work at Winchester.
On November 1, 1920, they quit Winchester, returned to Napanoch, and formed a new company to operate the old plant. New machinery was installed, and fifteen workers were employed. Messrs. Cushner, Schoonmaker and Quick were in charge of manufacturing, and Brackley (an accountant) was in charge of finance. By January of 1922, they were employing 25 workers. They were in business until 1939, and made all types of cutlery.
