JACK KNIFE SHOP CHICAGO

A marking used by Jack Knife Ben. “Union Stock Yards” is stamped on the small blade. Benjamin W. Chon (Jack Knife Ben) started his business in 1887. He began by selling pocket knives out of a cigar box at Chicago’s Union Stock Yards.

In 1895, he opened a small store, and later moved into a shop in the old railroad station house. His two sons ran the store, and Jack Knife Ben continued to sell knives out of his portable store at the stock yards. He continued to do business until the early 1940s.
